Dark Chocolate Triangles
1 stick melted butter
300 gr graham crackers, crushed
1/2 cup confectioners sugar
3 eggs
2/3 cocoa powder
1/2 cup dry Marsala vine
Beat the eggs then add the sugar, cocoa powder and vine mix well.
Add the melted butter when it is warm.
Pour the mixture over the crushed graham crackers, mix well (but softly) to combine.
Pour the mixture onto a piece of aluminum foil and shape, and freeze for at least 2 hours.
Serve thickly sliced.

Cherry Pancake
3 cups (1lb/500gr) pitted Bing cherries
1 1/2 cups milk
4 eggs
1/2 cup all-purpose (plain) flour
1/4 cup granulated sugar2 teaspoons vanilla extract
1 tablespoon kirsch
confectioners' sugar
*Preheat the oven to 350F. Butter a shallow baking dish or 10 inch (25cm) pie plate
**Pat the cherries dry with paper towels. Spread the cherries on the bottom of the prepared pan.
***To make the batter in a blender or in a food processor fitted with the metal blade, combine the milk, eggs, flour,granulated sugar,vanilla and kirsch.Process until mixed. Stop the machine and scrape down the sides of the container, then process again. Alternatively, in a bowl with an electric mixer set on medium speed, beat together the eggs and granulated sugar. Slowly add the milk, vanilla and kirsch, continuing to beat until fully incorparated.
****Pour the batter evenly ove the cherries. Bake on the middle shelf of the oven until the top is golden brown and a knife inserted in the center comes out clean, 45-50 min. Sprinkle with confectioners' sugar and serve while still very warm.

Orange and Lemon Bread
1 Orange and 1 lemon
3-4 eggs
1 1/2 cup sugar
3/4 cups oil( I use corn or vegetable oil, if you like use unsalted butter at room temp.)
1 cup milk
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/3 tsp salt
3 cups all purpose flour
*Preheat an oven 350F, gease the loaf pan.
**In a bowl, stir and toss together the flour, baking powder, baking soda and salt. Set aside.
***In another bowl, beat the sugar and oil with an electric mixer, add finely greated lemon zest and greated orange zest, cut the lemon and orange and squeeze half inside the bowl. Add the eggs one at a time, beating well after each addition.
****Reduce the speed to low and add the flour mixture along with the milk. Beat until blended (with low speed) and smooth. Pour the batter inside the pan and bake, 45-50 min. (until a toothpick comes out clean)
*****Remove the bread from the oven and transfer the pan to a wire rack. Let the bread cool in the pan for 15 min., then turn the loaf out and let cool completely.
